Which would be the better choice for deer and squirrel hunting.  I think the weight is nearly the same.
 
Am I better off with the 8x as far as my ability to hold them steady in the field or is 10x fine for this type activity.

Steadiness is one test, as less handshake will show more detail, especially in low light situations.
 
The 10x will give you less light to your eyes with an exit pupil of only 3mm.
 
So, for dawn and dusk situations, the lower magnification of 8x in the same aperture of 30mm with the increased exit pupil of 3.75mm will give you somewhat brighter viewing in low light and better steadiness for handheld viewing.
