Don't discount a blend with peated/un-peated malts.  You can create some very interesting tastes and you can decide how much you want the peat to dominate.  It's an interesting hobby.

You need to start up a solera/infinity bottle Dan. You could do one for Scotch and another for Bourbon. I think you’d get a kick out of it and it’s fun to see how the flavor nuances of your blend changes over time.

I've done it for Scotch and wine.. never for bourbon (only recently had a bourbon tasting itch).  Yes, I think I will do it again.  I still have some SMALL amounts of Scotch purchased overseas that I cannot get here that are good candidates.  Perhaps... someday... you and I will share a "wee dram" or two...

MACALLAN FINE OAK 21 YR


It's been a while since a tasted one of my "set back" whiskys.   I've been trying out a lot of bourbons lately.  Today, I saw the box with the subject fine distilling and thought "why not".  What a pure pleasure, just raw, smooth flavor that is overwhelming.  Heather honey, SWEET (not citrusy) orange, caramel, certainly vanilla, some burnt sugar, and a very mild sherry,port, bourbon flavor that comes from the 3 different types of oak casks it is aged in.  The oak is very light, the port comes out in the finish and blends with the sherry.  Each flavor is distinguishable, but fleeting.  
I constantly try to define my "favorite" distilling... NUMBER 1 overall over everything is Macallan 21 fine oak.  It just doesn't get any better than this... when it comes to THIS Scotch, one would have to say, "If God made any better Scotch than this... he kept it for himself..."
It engulfs, it overwhelms, it touches every element of olfactory and gustatory sense.  To me, it is perfect.  Perhaps it has been so long since my last consumption because everything else is so lacking behind it.

I'll have to try it some time. To date every Macallan I have tasted brought on the same basic reaction from me: OK, but vastly overrated. I haven't tried the 21year old though.

I've tried all the "lesser" Macallan offerings, as well.  I have a bottle of the 18 year old, generally keep a bottle of 12 year old for "generalities".   This is NOTHING like any of those.  I, too, find them OK, not overly exceptional.  The 21 is a "horse of another color".

I love Macallan 18 (the sherry cask version; I haven’t tried 18 Fine Oak version). I have tried the 15 Fine Oak and liked it pretty well. All other Macallans I tried I thought were “ok to good” but just not worth the price. For that matter, as much as I love 18 Sherry Cask, I think it too is way overpriced compared to other options at that age level. I have a bottle at home that I bought because I found it priced $50 less than what I’ve seen anywhere else. I’m sure there’s a good chance I’d really like the 21, but unless I have an opportunity to taste it at a well-equipped bar, I’m unlikely to find out anytime soon, as I’m unlikely to buy a bottle at the going rate.

That’s the problem I have with Macallan overall. They have some good whiskies, but at the respective price points of a given age level, I can find other options I prefer for less money.
